Sparkling wine is the bottle people are most nervous to open and most likely to waste. With the right stopper and a little technique, you can open Champagne quietly and safely, and still enjoy the bubbles two days later.

Serve sparkling wine cold, at 45 to 48°F (7 to 9°C). Twenty minutes in an ice bucket with water and ice chills a bottle faster than an hour in the fridge.

It seals firmly, is easy to put on with one hand and is short enough to fit on a standard fridge shelf, which many stoppers are not.

Watch outA sealer slows the loss of bubbles; it does not stop it completely.

Everyday use

A locking stopper grips under the lip of the bottle, so it stays put even with the pressure of sparkling wine. Good value, often sold in packs.

Watch outMake sure it clicks fully into place before you put the bottle away.

Narrow flutes show off the bubbles but hide the aroma. A tulip glass with a wider bowl lets you smell the wine, which is how many sommeliers serve good Champagne today.

Watch outTaller than a flute, so check your cabinet height.

A note from the floor

To open a bottle safely, keep your thumb on the cork the whole time. Loosen the cage, but leave it on. Hold the bottle at 45 degrees, pointed away from people, and turn the bottle, not the cork. You want a soft sigh, not a pop. A loud pop means you lost bubbles.

How to choose

For everyday Prosecco or Cava, any good locking stopper is enough. For good Champagne you want to enjoy over a week, Coravin Sparkling is worth it. For glasses, choose a tulip over a narrow flute, or simply use a good white wine glass.

Questions guests ask me

Does a spoon in the bottle keep Champagne fizzy?

No. It is a myth. Use a real sparkling stopper and keep the bottle cold.

How long does Champagne last after opening?

With a good stopper in the fridge, usually 2 to 3 days with pleasant bubbles. With Coravin Sparkling, much longer.

Flute or coupe?

Neither is ideal. Coupes lose bubbles fast and flutes hide aroma. A tulip-shaped glass is the best of both.
